Saintly Ginger Pumpkin Soup - November 1 - All Saints

This soup is a longtime fall family favorite passed along by Gramma Tierney. It’s great for Halloween and All Saints parties, lunch or a first course on Thanksgiving, and any time during pumpkin season. We also like to include it (non-seasonally) during our Lenten soup and stations get togethers. To make day-of preparation go more quickly, I often make the base ahead of time. (It can be refrigerated for up to a week.) Then the soup can be easily assembled at home, in someone else’s kitchen, or even while camping! You might want to make extra, it’s even better the next day.
