Making the butter yourself from heavy cream also gives you the buttermilk you need for this recipe. Stopping the homemade butter process just a tiny bit early saves the step of grating or chopping butter for the mixture and makes a really lovely scone dough. But you can also use frozen chopped or grated homemade or store-bought butter.
