On St. Thérèse's death bed, she said, "After my death, I will let fall a shower of roses. I will spend my heaven doing good upon earth. I will raise up a mighty host of little saints. My mission is to make God loved." Her feast day is best spent making small sacrifices and focusing on loving God in the little things - like slicing apples very thin to make a gorgeous dessert! These pastries are a very impressive (and tasty) way to honor St. Therese. The trick is to slice the apples as thin as you possibly can. The thinner the slices are, the easier they roll into pretty roses. It's a little bit fiddly - but the perfect thing to offer up in the name of St. Therese's "Little Way".
