Zabaglione (a.k.a. zabaione or sabayon) is a marvel of a dessert. With three basic ingredients—and a bit of practice at whisking over a water bath—you are rewarded with a warm, slightly boozy, cloud of deliciousness. The preferred wine, Vin Santo, or “holy wine”, is a sweet Italian dessert wine perfect for the Solemnity of All Saints. However, it’s pricey and mostly only available at specialty wine stores, so feel free to substitute Marsala or another sweet dessert wine. The finished custard is delicious served warm in individual bowls topped with berries, or as a dipping sauce for Ossi di Morto cookies.
