“Christmas Eve Salad” in English, Mexican Ensalada de Nochebuena (ehn-sah-LAH-dah de NO-chay BWAY-nah) is a cool/sweet/tart addition to any feast day table. It can also be made in a fruit salad-style without lettuce, but this recipe is how my family likes it best. These tasty flatbreads are quick and easy and make an excellent side for curries and any meal that needs a “pusher.” They’re great with dips or folded and filled with sandwich fixins. They are relatively flat, but allowed to rise (chametz again). A more authentic addition to a Passover meal would be store-bought or homemade matzo bread (more like crackers).

Well, the whole story is in Acts 9, but the short version is that, while on the road to Damascus with some companions, hurrying to persecute and arrest more Christians, Jesus appeared to Saul as a white light, flashing from the sky, and knocking him to the ground, presumably from a donkey or horse. Jesus identified himself, told Saul to knock it off with the persecuting, blinded him, and ordered him to get going. Saul’s companions helped him up, and got him to Damascus, where he was healed after three days, baptized, and began proclaiming Jesus in the synagogues, calling him the Son of God. We think that deserves a tasty treat to celebrate!

Today is traditionally for prayer and abstinence, particularly for a bountiful harvest and protection from natural disasters. We think one of the best ways to celebrate is with a quick, no-bake tart decorated with your own harvest, either homegrown or store-bought. Bonus, this recipe is simple enough that even the tiniest of hands can join in!

Super simple, but sooooo fancy, fruit water is a perfect addition to tea parties, luncheons, and . . . water fights? I think so, anyway. It’s most flavorful when prepared ahead of time and left to steep for 2-4 hours (not more than 10-12). But it’s fun to set out various bowls of ingredients and let kids build their own concoctions and eat/drink them right away. Fresh or frozen fruit works

Pentecost is the name of the Jewish festival that was being celebrated in Jerusalem when the Holy Spirit first descended upon Mary and the disciples. It is also called the Feast of Weeks or Shavuot. The fruit of the Spirit is love, joy, peace, patience, kindness, generosity, faithfulness, gentleness, self-control. The fruit of the salad . . . is up to you.

Also works for pouring and sprinkling. Because the Baptism of the Lord is almost always observed on a Sunday, we like to invite our kids’ godparents to join us for dinner. They are spread out all over the country (and there are a lot of them!) but it’s worth a try. And, whether or not godparents can join you, what better way to celebrate Saint John the Baptist dunking Jesus in a river, than by dunking bread in melted cheese? Right? RIGHT? Baptism of the Lord fondue party! Aldi is a great place to find affordable European cheeses.

Get it? Because St. Michael has a spear? This recipe works with thin or thick asparagus, just adjust the cooking time as necessary.

These amazing meatballs are one of the kids’ favorite things to cook with Gramma. They’re great with a toothpick in them as an appetizer alongside Pasta Alla Tavola, in soups, with sweet and sour sauce and veggies over rice, with marinara sauce in a meatball sub, or on spaghetti for any of the hundreds (thousands?) of Italian saints, or—for a Swedish saint—with a yummy cream sauce and served over egg noodles or mashed potatoes. If you’re going Swedish, don’t forget the lingonberry jam! They can be cooked in the oven or pan-fried on the stove. I always make triple what we’ll need. I freeze them flat on a cookie sheet, then dump them in a ziplock bag and store in the freezer. They reheat beautifully in the oven, in a pan on the stove, or right in a sauce or soup.

Even though angels technically don’t have hair, being pure spirits and all, we still love this delicious and simple pasta dish using Angel Hair noodles to celebrate the feast of the Guardian Angels!

This traditional Brazilian dish uses canned hearts of palm, which is convenient if you don’t want to harvest the inner core of a palm tree stem yourself. The flash of red from the tomatoes and red onions makes it especially appropriate for the day!

While no analogy will ever actually explain or actually help us understand the Trinity (so we should probably quit trying) . . . symbols of the Trinity can help us remember and devote ourselves to the mystery of three persons in one God. A three leaf clover has long been used as a symbol of the Trinity, and these tasty three piece rolls are a fun dinner table reminder of this unknowable mystery. Rolling and dunking the dough balls is a good job for kid-helpers.

Names are important and Jesus’ name is the most important of all. To celebrate the day, I like to make this tasty alphabet soup, and then . . . let the kids play with it! The kids get to scoop letters out with their spoons to build their names—and Jesus’ name of course—on the edge of their plates. You can pull the bay leaf and thyme sprigs out before serving, or you can just tell your family that whoever gets them in his bowl is king/queen/duke/princess/etc. of dinner. That’s what we do. For a heartier meal, add prepared meatballs, cooked chicken, or diced ham. The soup makes great leftovers, just add some water and reheat.

I was pretty excited to learn that there was in fact a traditional pastry meant to be eaten on Good Friday, and considered so Catholic that their sale was forbidden by decree of Elizabeth I (not a fan of Catholics). When I first looked up the recipe, they seemed awfully sweet and tasty for such a somber day. However, my love of tradition won out and now, I actually think their deliciousness adds to the mortification of having them for a collation. We WANT to eat ten of them, but we only eat two (and they are small). If you prefer, you can omit the icing cross and instead cut a cross into the top of each bun before baking.

Another option for a warm spiced beverage on a cool day is mulled cider. Putting it together at home is simple and tastes so much better than pre-made! One spice bag will flavor up to 8 quarts of mulled cider in one batch. Just keep the ratio of one part orange to three parts apple juice.

The hurricane, which originated in the 1940s at a French Quarter bar called Pat O’Brien’s, is the quintessential New Orleans beverage. Although this is traditionally a rum cocktail, we just do the juice part in our house. But both versions are absolutely delicious! And of course, make sure to serve your drinks in a glass shaped like a hurricane lamp.
